We have heard of and known about restaurants that close up within a year of their opening. This restaurant and its surviving for so long especially in a culinary country like spain is really commentable.

Botín Restaurant has kept the flame burning for the past 293 years … literally. Ever since the doors opened in 1725, the oven has been sizzling continuously, never to be extinguished and has a Guinness Book of Records for being the oldest and continuously operating restaurant in the world.

The restaurant was founded in 1725 by Frenchman Jean Botin and his wife, and was originally called Casa Botín.It was inherited by a nephew called Candido Remis and had a name change to Sobrino de Botín, which survives to this day. Sobrino is the Spanish word for nephew.

The restaurant was built on an old sixteenth century cellar vaulted ceilings and is currently made up of four floors, all of which have preserved the traditional tavern atmosphere. It is now a classic and a landmark of traditional cuisine in Madrid.

According to deputy manager Luis Javier Sànchez Alvarez, the oven is the crown jewel of the restaurant and the fundamental element of their most popular dish, the roast suckling pig. The roast lamb and suckling pig is considered as the signature dish of the restaurant, which are roasted slowly and carefully in the old wood-fired oven giving it a tender, juicy, and delicate taste.

The recipes used today have been passed down from generation to generation, keeping the legacy of these traditional dishes alive. With the honor of being the oldest restaurant in the world, Alvarez hopes to keep the doors open for centuries to come.

The artist Francisco de Goya worked in Cafe Botin as a waiter while waiting to get accepted into the Royal Academy of Fine Arts.The restaurant is mentioned in an Ernest Hemingway novel and the book Fortunata y Jacinta by Benito Pérez Galdós (published 1886-1887).
